Ryan Poppenga presented his plans this week at the City of Eau Claire License Review Committee for Poppenga Monks Inc., d/b/a Monk's Bar & Grill of Eau Claire, which will be located in the former Northwoods Brew Pub at 3560 Oakwood Mall Dr., Eau Claire.
"We are going to be a family-based restaurant. It will probably be 70 percent food and 30 percent alcohol," said Poppenga, who closed on the purchase of the building on Fri., Dec. 11, 2015.
Monk's owns and operates four other locations in Wisconsin, including the original restaurant in Wisconsin Dells, and one each in Middleton, Sun Prairie and Lake Delton.
"Our plan is to do extensive remodeling. We're hoping to be open by mid-to-late April. Construction should be done by mid-March," said Tom Heller, who purchased the Monk's operations in 1982.
Seating for the new establishment is expected to be for about 285 patrons. Poppenga stated that he anticipates having between 55-65 employees.
The Eau Claire City Council will act on the liquor license request at its Jan. 12th meeting.
The City of Eau Claire License Review committee had no objection to the plan.TBL
